I had the chance to attend the exclusive tasting of “Nelly Does British” by Chef Nelly Robinson at Cook & Brew, The Westin Singapore.

Seated by the floor-to-ceiling windows, we watched the city transform from day to night with sweeping views of Marina Bay and the Central Business District, a stunning backdrop for dinner.

Crab Tarts – Poached crab with chili and lime, brown butter hollandaise. A flavourful start, thick and creamy with generous crab meat and a crisp tart shell.

Truffle Potato Dabs – Roast potato hash brown with truffle mayonnaise. Light, crispy, and a great complement to the first dish.

Biryani + Naan – A surprise twist: naan bread foam over biryani broth. A liquid biryani, aromatic and comforting.

Steak Bake Pasty – Pepperberry steak pasty with herb shortcrust. Shaped like mini curry puffs, but bursting with rich flavour.

English Crumpets – Sourdough crumpet with black garlic butter. The butter was gently sweet rather than overpowering. Just remember to check your smile after. 😬

Kingfish Tandoori – 48-hour marinated Japanese amberjack with smoked yogurt and prawn soil. Balanced and refined.

Beef Wellington – Slow-cooked beef cheek wrapped in pastry, served with carrots and pepper gravy. A creative take using beef cheek, with pastry that was crisp and beautifully decorated.

Dessert
Banoffee Pie – Banana crème, wattleseed caramel, and caramelised white chocolate. A delightful finale and one of the highlights we kept talking about after dinner.
