Located at 17 Hongkong Street, Kappo-style Japanese restaurant in Singapore. Shunsui is celebrated for its multi-course omakase menus.

A dark entrance corridor leads into a minimalist dining room built around a spacious U-shaped wooden counter.

Warm wood tones, elegant table settings, and front-row seats to the chefs create an intimate atmosphere throughout the meal.

We had the opportunity to experience both the Fuga and flagship Shunsui menus.

The experience began with a welcome drink topped with a smoke bubble, followed by an appetiser served in a cocktail glass.

Udon with shrimp sauce, crab, sakura shrimp, and Tosa-Zu jelly made for a refreshing and creative start.

From here, both menus followed their own journey.

Shunsui's presentation in a giant clam shell was elegant, while Fuga's seven varieties created an impressive visual spread.

Watching the chef break down and grill the whole lobster in front of us was one of the highlights.

The wagyu main courses showcased two different techniques.
Fuga featured Wagyu Sirloin Shabu-Shabu, while Shunsui presented Wagyu Seared over Straw Flame. Watching both preparations back-to-back highlighted the chefs' precision and timing.

Another signature moment was the overflowing Ikura Rice, where the chefs generously spooned salmon roe over the rice until it overflowed right before our eyes.

The meal concluded with Liquid Nitrogen Ice Cream prepared live at the counter, followed by Sakura Mizu Shingen Mochi.
