Bajan souse and pudding is more than just a dish—it's a celebration of culture and history. Traditionally served cold, souse is made with pickled pork cuts such as pig ears, tongue, and trotters, combined with a tangy cucumber, parsley, hot pepper, salt, and lime juice pickle. This refreshing pickle complements the meaty souse perfectly, balancing flavors and textures. The pudding referred to here is actually steamed sweet potato pudding, grated and seasoned before being baked and served warm. This contrast between the cold, savory souse and the warm, slightly sweet pudding is what makes the dish unique and beloved. Many Bajans enjoy this meal as a Saturday staple, connecting to their roots and sharing the experience with family and friends. When I tried making souse and pudding at home, I found that using fresh ingredients and traditional seasoning made all the difference. Adding steamed breadfruit, which is sometimes mixed with the pickle, offers an even more authentic experience. For those living abroad and missing a taste of Barbados, preparing this dish brings comfort and nostalgia.
