BLT Chicken Salad Sandwich Recipe
Ingredients
For the chicken salad:
* 2 cups cooked chicken breast, chopped or shredded
* 1/3 cup mayonnaise
* 1 tablespoon Dijon mustard
* 1/4 cup celery, finely diced
* 2 tablespoons green onion, finely sliced
* 1 teaspoon lemon juice
* 1/2 teaspoon Chef Bae All-Purpose Seasoning
* 1/4 teaspoon garlic powder
* 1/4 teaspoon onion powder
* 1/4 teaspoon black pepper
* 1/4 teaspoon smoked paprika
* 1 teaspoon sweet relish, optional
For the sandwich:
* 4 slices thick sandwich bread or Texas toast
* 2 tablespoons butter, softened
* 6 slices bacon, cooked crispy
* 4 pieces green leaf lettuce
* 1 large tomato, sliced
* Extra black pepper, for topping
Instructions
1. Add the chopped chicken to a mixing bowl.
2. Add mayonnaise, Dijon mustard, celery, green onion, lemon juice, Chef Bae All-Purpose Seasoning, garlic powder, onion powder, black pepper, smoked paprika, and relish if using.
3. Mix until the chicken salad is creamy but still chunky. Taste and adjust seasoning if needed.
4. Butter one side of each slice of bread.
5. Toast the bread in a skillet over medium heat for 2 to 3 minutes per side, or until golden brown and crisp.
6. Lay lettuce on the bottom slice of toast.
7. Add tomato slices on top of the lettuce and sprinkle lightly with black pepper.
8. Spoon a generous amount of chicken salad over the tomatoes.
9. Add crispy bacon slices over the chicken salad.
10. Place the second slice of toasted bread on top.
11. Slice in half if desired and serve immediately on a white plate with chips, fries, or a pickle spear.
