For those who might not know, the Chopped Cheese is a staple in NYC bodegas, a beautiful symphony of perfectly seasoned ground beef, melted cheese (usually American or cheddar), sautéed onions, and sometimes peppers, all chopped up together on the griddle and served on a toasted hero roll with classic toppings like lettuce, tomato, and condiments. It's messy, it's hearty, and it’s pure comfort in sandwich form. Seeing my creation, I just had to share it because it looked so delicious, and I think everyone deserves to experience this joy! Here's how I put together my ultimate Chopped Cheese, making sure to get those flavors just right: What You'll Need: 1 lb ground beef (80/20 for best flavor) 1 medium yellow onion, finely diced 1/2 green bell pepper, finely diced (optional, but I love the crunch) 4-6 slices of American cheese (or a mix of American and provolone/cheddar) 2 hero rolls or sub rolls Salt, black pepper, garlic powder, onion powder (to taste) Olive oil or butter for the griddle For serving: Shredded lettuce, sliced tomatoes, ketchup, mayonnaise (or a spicy mayo sauce!)
