pan. Cook the sausage and veggies
I sliced peppers, onion, and kielbasa. Add the remaining seasoning mix, minced garlic, and a little more olive oil. Toss until everything is evenly coated, then spread the mixture on the other side of the sheet pan.
Bake for 25–30 minutes, flipping the pierogies halfway through and stirring the vegetables.
One of my favorite quick meals to prepare is this pierogies with sausage, peppers, and onions dish because it combines ease with a comforting burst of flavor. I usually start by slicing the kielbasa, onions, and both green and red bell peppers into bite-size pieces to ensure they cook evenly. The use of smoked paprika along with sazón seasoning really elevates the taste, giving it a subtle smoky and savory depth that pairs beautifully with the pierogies. For crispiness, I prefer pan-frying the pierogies using a cooking spray or a light amount of olive oil until both sides turn golden brown and develop a satisfying crunch. This method contrasts wonderfully with the tender vegetables and juicy sausage. However, baking on a sheet pan is a great hands-off alternative, especially when you want to cook everything together more evenly without standing over the stove — just remember to flip the pierogies halfway through baking for even crispness. When making this dish, using frozen pierogies is a convenient choice that holds well in texture when cooked properly. I also recommend stirring the veggies as they bake to caramelize their natural sugars, adding sweetness and complexity to the dish. This meal is incredibly versatile and can be customized by adding your favorite herbs, like thyme or rosemary, or a splash of hot sauce for a kick. It works great as a family dinner or even a casual gathering dish because it’s simple to scale up. Overall, the combination of hearty sausage, colorful peppers, and crisp pierogies creates a satisfying comfort food experience that’s both flavorful and filling.
