I mean, we all know and love the classic red watermelon, but this yellow variety is a game-changer, especially for making the most amazing agua fresca. But it's not just pretty; the taste is subtly different from red watermelon. When I first decided to make this agua de sandia, I wanted to pick the perfect melon. Here’s a little tip for choosing a great yellow watermelon: Look for one that's heavy for its size, which usually means it's juicy. Check for a creamy yellow spot on the bottom—that's where it sat on the ground ripening in the sun. A dull thumping sound when you tap it is also a good sign of ripeness. Now, for my super simple yellow watermelon agua fresca recipe, inspired by the basic steps I tried: You'll need about 8 TAZAS DE SANDIA (8 cups of cubed yellow watermelon) and just 1 TAZA DE AGUA (1 cup of water). First, I blend the watermelon chunks with the water until it's completely smooth. I then LICUAMOS (blend) everything really well. After blending, I always COLAMOS (strain) the mixture through a fine-mesh sieve to remove any pulp or seeds, giving it that silky-smooth texture we all love in an agua fresca.
