One pan: Unstuffed bell pepper 🫑
To a pan, add
1lb ground chicken
6 oz Onion, diced
10 oz bell peppers, diced
A big spoonful (or more, whatever your heart tells you) of Garlic, minced
Cook it up, then add
8oz Kale, chopped (optional)
1 15 oz can of Diced Tomatoes
1 c Rice, uncooked
4 c chicken Broth
1 tsp Chili, 1 tsp Chili Powder, 1/2 tsp cumin, 1 tsp salt, 1/2 tsp Ground Black Pepper OR Season with your ❤️
Let simmer about 15 minutes or until rice is fully cooked and liquid is absorbed. Make sure to stir it occasionally
Then add 2 c Shredded Cheese (I used 3 cheese cheddar 😋 )
Place in the oven at 450 degrees until cheese is toasted
