I usually start with bone-in, skin-on chicken thighs or breasts for maximum flavor, boiling them until cooked through. Once cooled slightly, I shred the chicken and set it aside. Don’t discard that cooking liquid – that’s your flavor base! For an even richer, more Progresso-like depth, consider using good quality chicken stock in addition to your homemade broth, or even a bouillon cube to boost that savory umami. Strain your homemade broth to remove any impurities. Next, the aromatics are key. Think finely diced carrots, celery, and onions – the classic mirepoix. Chicken & Veggie Soup 🍲😍
#lemon8diarychallenge This was soooo good at 11pm last night 😅 I cooked chicken breasts in the instant pot for 10 mins at high pressure with a cup of chicken broth. Once those were done, I shredded the chicken so we could use it for quesadillas today. The chicken plus the broth smelled
