I cut every nugget in half, threw them back on the grill to get that crispy edge back, brushed a little butter on top. Then I made my secret peanut sauce — creamy, rich, sweet, sour, little bit spicy. Real coconut milk. The way peanut sauce is actually supposed to taste.

Stacked it like a little sandwich — crispy nugget, cucumber slice, one coriander leaf on top, stick it together, big spoon of that thick peanut sauce.

First bite? I almost lost it. The crunch. The cold cucumber. The coriander. That sauce.
