🧄 Ingredients:

• 1/4 cup olive oil

• 1 large onion, chopped

• 1 green bell pepper, chopped

• 1 cubanelle pepper (or more bell pepper if unavailable), chopped

• 1 head of garlic (about 8–10 cloves), peeled

• 1 bunch cilantro (with stems), chopped

• 1/2 bunch culantro (if available), chopped (optional but authentic)

• 4–5 ajíes dulces (sweet chili peppers), chopped (optional but traditional)

• 1 large tomato or 1/4 cup tomato sauce (optional, depending on style)

• Salt to taste

🥄 Instructions:

1. Blend raw sofrito ingredients:

• In a blender or food processor, combine onion, peppers, garlic, cilantro, culantro, ajíes dulces, and tomato (if using). Blend until it forms a smooth but slightly chunky consistency.

2. Sauté the sofrito:

• Heat the olive oil in a large skillet over medium heat.

• Add the blended sofrito mixture to the skillet.

• Cook, stirring often, for 10–15 minutes, or until most of the liquid has evaporated and the sofrito becomes fragrant and slightly thickened. Do not brown it—lower the heat if it starts sticking or getting too dark.
