🛒 Ingredients
Crust:
• 1 ½ cups graham cracker crumbs
• ⅓ cup melted butter
• ¼ cup sugar
• 16 oz cream cheese (softened)
• ½ cup sugar
• 2 eggs
• 2 tbsp fresh lemon juice
• 1 tbsp lemon zest
• 1 tsp vanilla extract
Strawberry Topping:
• 2 cups fresh strawberries (chopped)
• ¼ cup sugar
• 1 tbsp lemon juice
• 1 tbsp cornstarch + 2 tbsp water (slurry)

1. Make the crust:
• Preheat oven to 350°F
• Mix graham crumbs, sugar, and melted butter
• Press firmly into a lined 8x8 pan
• Bake for 8–10 minutes, then let cool
2. Make the cheesecake layer:
• Beat cream cheese until smooth
• Add sugar and mix well
• Add eggs one at a time
• Mix in lemon juice, zest, and vanilla
• Pour over cooled crust
