Don't forget to pat them dry after you've drained water from them – this helps achieve that beautiful golden-brown skin when you fry until the skin is golden brown. Trust me, that crispy skin adds so much flavor! Now, the soy sauce! The recipe calls for both low sodium soy sauce and dark soy sauce.
