Pumpkin Oatmeal Bars Recipe

Ingredients:

* 1 cup pumpkin puree

* 1/2 cup peanut butter (or any nut/seed butter)

* 1/3 cup maple syrup

* 1 tsp vanilla extract

* 1 1/2 cups rolled oats

* 1/2 tsp cinnamon

* 1/4 tsp salt

* 1/2 tsp baking powder

* 1/3 cup chocolate chips

How to:

1. Preheat oven to 350°F and line an 8x8 pan with parchment.

2. Mix together the pumpkin, peanut butter, maple syrup and vanilla.

3. Stir in oats, cinnamon, salt, baking powder and chocolate chips.

4. Pour into the pan and smooth the top.

5. Bake for 25–30 minutes until golden and a toothpick comes out clean.

6. Let cool, then slice into bars and enjoy!
