Cozy up with this creamy, dreamy Dairy-free Chicken Pot Pie gnocchi soup! (Recipe in caption!
Ingredients:
* 2 tbsp olive oil or butter
* 1 onion, diced
* 2 garlic cloves, minced
* 2 celery stalks, diced
* 2 medium carrots, diced
* 1/2 cup peas
* 2 tsp Italian seasoning
* 1 bay leaf
* 4 cups chicken broth
* 1 cup cashew cream (blend 1/2 cup raw cashews with 3/4 cup water until smooth* see note below for more tips) (*You can substitute with regular cream If you prefer!)
* 2 cups shredded cooked chicken
* 1 package (about 12 oz) gnocchi
* Salt and pepper to taste
How to make it:
1. Heat olive oil or butter in a large pot over medium heat. Add onion, garlic, celery, and carrots, and sauté for 5-7 minutes until softened.
2. Stir in the herbs. Add chicken broth and cashew cream and bring to a simmer.
3. Bring the soup to a boil, then cover and let simmer on medium-low for 15 minutes.
4. Add shredded chicken, peas and gnocchi to the pot. Cook for 3-5 minutes until gnocchi is tender.
5. Season with salt and pepper to taste, remove bay leaf, and serve warm!
***It’s important to use RAW UNSALTED cashews to make the cashew cream. If you don’t have a powerful blender, I recommend soaking the cashews in boiling water for 30 minutes, then draining and blending. This will help them blend more smoothly.
