Ingredients: • 2 cups cooked quinoa • 1/2 cucumber, chopped • 1 cup chickpeas • 1/2 small red onion, finely chopped • 1/4 cup fresh basil, chopped • 1/4 cup dill, chopped • 1/4 cup crumbled feta • 1/4 cup toasted almonds
Lemon Dressing: • 3 tbsp lemon juice • 1/3 cup olive oil • 1 tbsp Dijon mustard • 1 tsp honey • 1 tsp minced garlic • Salt & pepper
How to: 1️⃣ Add all salad ingredients to a large bowl. 2️⃣ Whisk dressing ingredients together until smooth. 3️⃣ Pour over the salad and toss well to combine. 4️⃣ Serve right away or store in the fridge.
