My kind of comfort bowl🤤
1 block firm or extra firm tofu, pressed
Neutral oil
Sauce:
1 tbsp honey
4 tbsp coconut aminos or tamari
1 tbsp apple cider vinegar
1 tbsp gochujang paste
Saute the thinly sliced cabbage in some neutral oil, salt, black pepper and a little coconut aminos or tamari. Bake crumbled tofu at 400 degrees F for 12-15 min or if you skip, sear on each side until golden brown before adding the sauce. For the pickled veggies, I let it marinate in apple cider vinegar. If you want to make it quicker, you can use frozen brown rice that you can microwave or heat up on the stove.
Okay, so you’ve tried the Sweet & Spicy Tofu Cabbage Bowl recipe, and I bet you loved it! But I wanted to share a few extra tips and tricks I’ve picked up along the way to make it even more incredible, truly a comfort dinner you'll crave. First, let's talk about the tofu. The recipe calls for firm or extra firm tofu, and pressing it is a game-changer. I usually press mine for at least 30 minutes, sometimes even an hour, to get rid of that excess water. This makes it absorb flavors better and get super crispy when you bake at 400 degrees F or pan fry it. I love crumbling the tofu with my fingers because it creates those irregular, rustic pieces that soak up all the delicious gochujang sauce. If you're short on time, don't sweat the baking – pan fry in a bit of neutral oil until golden and slightly browned. That little bit of char adds so much depth! For the sauce, the blend of honey, gochujang, coconut aminos (or tamari), and apple cider vinegar is just perfect. But don't be afraid to adjust! If you like it spicier, add a tiny bit more gochujang. Want it a touch sweeter? A drizzle more honey. Sometimes, I even mince a little ginger and garlic right into the sauce for an extra aromatic kick. It really elevates the whole dish. Now, the thinly sliced cabbage is key. When sautéing, I often let it sit in the pan untouched for a few minutes before stirring. This allows it to get some lovely browning and caramelization, which adds a fantastic sweetness. Simple salt & black pepper and a splash of coconut aminos are all you need to bring out its natural flavor. And don't forget the other aromatics! Thinly slice onion and mince garlic to sauté before the cabbage – it builds a beautiful flavor base. The pickled veggies are my secret weapon for adding a burst of freshness and tanginess. While the recipe suggests thinly sliced cucumbers and carrots, I’ve also had great success with daikon radish or even thinly sliced red onion. Marinating them quickly in apple cider vinegar (and maybe a pinch of salt and sugar) really brightens up the whole bowl and cuts through the richness of the tofu and sauce. It’s such a simple step but makes a huge difference. As for serving, brown Jasmine rice is classic, but this bowl is incredibly versatile. It's delicious over quinoa, or even cauliflower rice if you're looking for a lower-carb option. And the toppings! Don't skip the cilantro for a fresh herby note. I also sprinkle on some furikake seasoning – it adds a delightful umami crunch that truly brings everything together. My mom brought some back from Japan, and it's just divine on this. What I truly love about this gluten free tofu cabbage bowl is how it tastes even better the next day. The tofu really soaks up all those amazing flavors, making it perfect for meal prep. It’s a truly simple yet elevated comfort dinner that always hits the spot. Give these tips a try, and let me know what you think!
