... Read moreHey fellow foodies! Since sharing my super easy garlic roasted potatoes, I've had so many questions about variations and how to get them absolutely perfect every time. I totally get it – these potatoes are a staple for a reason, and making them your own is part of the fun!
You know how I mentioned using cilantro and parsley? Well, if you're like some of my friends and absolutely adore the earthy, slightly peppery flavor of oregano, you're in for a treat! While my original recipe focused on a fresh, vibrant herb profile, these potatoes are incredibly adaptable. To make delicious garlic oregano potatoes, you can simply swap out or add dried oregano alongside the other seasonings. For a batch using about 2-3 pounds of chopped potatoes, I'd recommend starting with 1-2 teaspoons of dried oregano, mixing it in when you coat your potatoes with olive oil and minced garlic. If you're lucky enough to find fresh oregano, chop about a tablespoon and add it halfway through baking to preserve its delicate flavor. Trust me, the aroma alone will make your kitchen smell amazing!
Beyond oregano, don't be shy about experimenting with other herbs. Rosemary and thyme are fantastic additions for a more rustic, Mediterranean twist. Just remember that hardy herbs like rosemary can stand up to longer cooking times, so you can add them at the beginning with your garlic. For softer herbs like dill, it's best to sprinkle them on after the potatoes come out of the oven for maximum freshness.
Now, let's talk about achieving that glorious, golden-brown roasted perfection. Everyone wants crispy potatoes, right? Here are a few tricks I've learned from my own kitchen adventures:
Uniform Chopping: As I mentioned in the original post, this is key! Evenly sized pieces mean evenly cooked, and therefore, evenly crispy potatoes.
Don't Overcrowd the Pan: This is a big one! If your baking sheet is too full, your potatoes will steam instead of roast, leading to sad, soggy spuds. Give them space to breathe and get beautifully crisp. You might need to use two baking sheets.
Hot Oven, Hot Pan: Preheat your oven to 400 F (200 C), and if you can, let your baking sheet heat up in the oven for 5-10 minutes before adding the seasoned potatoes. This gives them an instant sear.
Oil it Up (Just Right): Use enough olive oil to coat your potatoes, but not so much that they're swimming. A light, even coating is perfect for crisping.
The Flip: My recipe already tells you to turn them after 20 minutes, and that's crucial! This ensures all sides get that lovely golden crust. I sometimes even flip them again later if I'm going for extra crispiness.
Optional Starch Trick: For an extra crispy exterior, some people swear by tossing their chopped potatoes with a tablespoon of cornstarch (or arrowroot powder) after coating them in oil and before adding seasonings. It creates an almost fried-like texture!
Once your perfectly roasted garlic potatoes are ready, they're not just a side dish; they're a centerpiece! I love pairing them with a simple grilled chicken or a pan-seared steak. They also make a surprisingly delicious addition to a weekend brunch spread, maybe alongside some scrambled eggs.
Remember, cooking should be fun and forgiving. Don't stress too much if your first batch isn't picture-perfect. Every time you try, you learn something new. Happy roasting!
How long do I cook the potatoes for in total and what temperature do I cook them at?
