🍲✨ LEFTOVER SOUP (aka Clean Out the Fridge Soup)✨🍲
This recipe was never supposed to be a recipe... but it turned out SO GOOD that I had to share it. 😭
If you have random ingredients sitting in your fridge, this is your sign to throw them all in a pot and trust the process.
🧄 Ingredients
5 carrots
1/2 head garlic
1 onion
Butter
Salt, pepper & red pepper flakes
1 cup water (for deglazing)
6–8 cups water
Chicken bouillon
1 lb penne pasta
Optional "I don't want this to go to waste" additions:
Potato gnocchi
Leftover turmeric & saffron rice
To Finish
1 cup milk
1 block sharp cheddar cheese
1 ring smoked sausage
Parmesan cheese for serving
👩🍳 Directions
1. Blend carrots until they resemble chunky applesauce.
2. Blend the onion and garlic.
3. Add everything to a large pot with butter, salt, pepper, and red pepper flakes. Cook until softened.
4. Pour in 1 cup water and scrape up all the flavor from the bottom of the pot.
5. Add 6–8 cups water and bring to a boil.
6. Simmer until reduced by about ⅓, tasting and adjusting seasonings as needed.
7. Add chicken bouillon.
8. Stir in the pasta and cook until nearly tender.
9. Add gnocchi and leftover rice if using.
10. Simmer 3–5 more minutes.
11. Stir in milk, cheddar cheese, and smoked sausage.
12. Cook until creamy, melty, and perfect.
🧀 Top with freshly grated parmesan and prepare to be shocked by how good "random leftovers" can taste.
