Cilantro lime fajitas

Dinner tonight was a huge hit! My kids cleaned their plates.

2 chicken breasts cut up into chunks

1 lime

1 cup of each colored sweet pepper

1 cup red onion (I forgot to add these COMPLETELY)

2 cups finely shredded Mexican cheese

1 cup of white or yellow rice

Container of your favorite queso

Container of your favorite salsa (I make my own, let me know if you want THAT recipe!)

Toss your chicken chunks into a bowl with cumin, paprika, salt, white pepper, cayenne, and garlic powder. Juice one whole lime over and shake until spice mixture is evenly spread across everything.

Oil your pan just enough and toss chicken in and cook until almost done, then put your peppers and onion in and cook until chicken is white all the way through.

Remember, rice is two parts water to one part rice. I do one cup of warm water, and one cup of reduced sodium chicken broth. Bring to a boil snd simmer for 20 minutes.

Once your rice and chicken are done, that’s it! Deconstruct it like I did for my children, mix it together with your salsa and queso and make the best burritos, or mix it up and eat with tortilla chips! #mexicanricerecipe #dinner #easy #easydinnerideas #chicken
