This week, we’re keeping it colorful, clean, and crazy easy with these Rainbow Chicken Bowls you’ll actually look forward to eating. 💃🍴
WHAT YOU NEED (makes 4 bowls):

• 2 chicken breasts (grilled, baked, or air-fried!)
• 1 cup cooked quinoa or brown rice
• 1 cup cherry tomatoes (halved)
• 1 cup shredded carrots
• 1 cup steamed broccoli
• 1/2 cup purple cabbage (raw or lightly sautéed)
• 1/4 cup hummus or tzatziki for drizzling
• Optional: avocado slices, feta cheese, or a sprinkle of Everything Bagel seasoning 🥑🧀✨
HOW TO MAKE IT:
1. Cook your chicken however you love it—seasoned with garlic, paprika, lemon, or just salt & pepper!
2. Lay out your containers like a mini assembly line.
3. Divide your base (quinoa/rice) evenly.
4. Top with your rainbow veggies and sliced chicken.
5. Drizzle with hummus or dip of choice. Seal and store!
