Slow simmered, wildly indulgent, and absolutely worth the extra spoonful! This soup was made to be enjoyed for life’s sweetest moments- creamy, rich and oh so cozy!

We’re using the sweetest lobster in the world for this recipe, Maine Lobster 🦞 AND the entire lobster is used in this soup- shells and all! Maine Lobster will truly transform and elevate your everyday soups! You can purchase lobster year-round, fresh or frozen, from Maine Lobster.

What you’ll need:

🦞 2-3 Maine Lobsters

🦞 Olive oil

🦞 Butter

🦞 Onion

🦞 Leeks

🦞 Carrots

🦞 Celery

🦞 Flour

🦞 Heavy cream (or half-and-half or milk)

🦞 Brie cheese (rind removed)

🦞 Salt

🦞 Black pepper

🦞 Parmesan cheese & chives (garnish- optional)

In a pot on high heat, add lobster shells in with butter, onion, celery, carrots and water, simmer 30 minutes to make a quick lobster stock; strain and set broth aside. In a separate pot, make a roux with butter and flour and add chopped leeks till cooked. Then slowly whisk in lobster broth and cream. Gently melt in chunks of brie (rind removed), then add chopped lobster meat just long enough to warm through, season with salt, pepper and serve hot with crispy bread.

P.S. - this soup tastes even better the next day! So, it’s a great recipe to make the day before if planning to serve for a dinner party.
