This brie, lemon curd & blueberry galette is what happens when a cheese board meets spring time flavors. Buttery pastry, melty brie, bright lemon curd, and juicy blueberries all baked into one effortless show-stopping appetizer!

What you’ll need:

🧀 one puff pasty sheet thawed

🧀 8 oz brie cheese wheel sliced

🧀 4-5 tbsp lemon curd

🧀 1/4 cup blueberries

🧀 1 tsp flaky sea salt

🧀 1 beaten egg (egg wash)

🧀 chopped basil (optional garnish)

🧀 honey drizzle (optional garnish)

Heat oven to 400 F and line a baking sheet with parchment paper. Lay down your puff pastry sheet and 1/2 the lemon curd in the middle of the pastry. Put down your brie cheese slices and add the rest of your lemon curd on top with the blueberries. Fold the edges of the puff pastry in and brush with egg wash. Add on a bit of sea salt. Bake, cut and enjoy! It’s that easy 🫐🍋
