What you’ll need:
1 lb short pasta noodle
3 cups of corn (I used canned, you can also used grilled)
1 cup shredded cotija cheese (or feta)
1/3 cup diced red onion
1/3 cup chopped cilantro
1/3 cup cooked crispy bacon
1/2 cup chopped green onions
Dressing:
1 cup Hellmann’s Chipotle Mayo
1/4 cup sour cream
Juice of 2 limes
Zest of 1 lime
½ tsp smoked paprika
½ tsp garlic powder
Salt and pepper to taste
Cook your pasta to al dente and wait until cooled off. While it cooks, pan fry your bacon until crispy. In that same pan char up your corn for 5-8 minutes on med/high heat. Then in a bowl add in all your pasta salad ingredients. Make your dressing by combining everything and mixing well. Pour on your pasta salad, mix and enjoy!
