Hey foodies! If you're anything like me, a good pasta salad is an absolute must-have, especially when the weather gets warm. And let me tell you, this Italian pasta salad with ham and pepperoni is not just good, it’s legendary in my household! I've been making variations of this for years, and I promise you, this specific combo is a game-changer. It's the perfect balance of savory, tangy, and a little bit spicy, making it ideal for everything from backyard BBQs to simple weeknight dinners. So, what makes this ham and pepperoni pasta salad so special? It's all about the layers of flavor and texture. You get the salty chewiness from the ham, the zesty kick from the pepperoni, and the creamy fresh mozzarella pearls that melt in your mouth. But the real star, in my opinion, is the dressing. I used to just toss it with store-bought Italian dressing, but once I started making my own, there was no turning back! The secret is in the creamy base from the Mayonnaise, brightened up with a generous splash of Red Wine Vinegar. Then, I layer in the aromatics: a good tablespoon of Garlic Powder and another of Onion Powder for that deep, savory undertone. For a little warmth and a subtle kick, Red Pepper Flakes are a must – adjust to your liking! And of course, more Italian Seasoning to tie all those wonderful flavors together. Don't forget to finish with Salt and Pepper to taste; it truly makes all the difference. Now, for some tips to elevate your ham and pepperoni pasta salad to superstar status. First, always cook your pasta *al dente*. Nobody wants mushy pasta salad! Rinse it with cold water immediately after draining to stop the cooking process and prevent it from sticking. This also helps keep your salad cool and fresh. When it comes to the ham and pepperoni, don't skimp on quality. Good quality meats will make your salad sing. I love dicing them into bite-sized pieces so you get a bit of everything in each forkful. As for the mozzarella, those little pearls are fantastic, but if you can't find them, cubed fresh mozzarella works just as well. Just remember to drain any excess liquid. Another pro-tip: make this salad ahead of time! It's one of those dishes that actually tastes better after a few hours in the fridge, or even overnight. This allows all those incredible flavors from the ham, pepperoni, veggies, and especially that homemade dressing, to really meld together. Trust me, the wait is worth it. When you're ready to serve, give it a good stir, and if it seems a little dry, you can always add another drizzle of olive oil or a tiny splash more of red wine vinegar to freshen it up. Finally, don't be afraid to customize! While the ham and pepperoni combo is my absolute favorite, you can totally add other Italian-inspired ingredients. Think Kalamata olives, sun-dried tomatoes (chopped), or even some finely diced bell peppers for extra crunch and color. This pasta salad is incredibly versatile and always a hit. Enjoy making and devouring this delicious creation – it’s truly a crowd-pleaser and will be a staple in your recipe rotation!
