Ingredients:

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 1/2 cups mashed ripe bananas (about 4 medium bananas)

1/4 cup sour cream or plain Greek yogurt

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

1/2 cup semi-sweet chocolate chips (optional)

Directions:

Preheat Oven:

Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper.

Cream Butter and Sugar:

In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

Add Eggs and Bananas:

Beat in the eggs, one at a time, until well combined. Stir in the mashed bananas, sour cream (or Greek yogurt), and vanilla extract.

Mix Dry Ingredients:

In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

Combine Mixtures:

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Avoid overmixing.

Add Nuts and Chocolate Chips (Optional):

Gently fold in the chopped nuts and chocolate chips if using.

Pour Batter:

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Bake:

Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

Cool:

Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

... Read moreBanana bread is a beloved treat that combines the natural sweetness and moisture of ripe bananas with simple ingredients. To create the perfect banana bread, choose fully ripe bananas; the more spots on the peel, the sweeter the banana! Experimenting with add-ins can enhance the flavor and texture of your loaf. Consider dark chocolate chunks, dried fruits, or even a swirl of peanut butter for a delicious twist. For those looking for healthy variations, use whole wheat flour instead of all-purpose flour, and replace some of the sugar with honey or maple syrup. Additionally, Greek yogurt can not only replace sour cream but also add a protein kick to your bread. The key to an incredibly soft loaf lies in the baking time. Monitor your bread closely; overbaking can lead to dry slices. Once baked, let it cool before slicing to ensure clean edges and maximum moisture retention. Enjoy your homemade banana bread fresh, toasted with butter, or even as a base for a delectable breakfast sandwich!
