Creamy Cajun Shrimp Spaghetti🍽🍤🍤

A delicious and bold pasta dish featuring tender shrimp, creamy Cajun sauce, and fresh spinach for a satisfying meal with a kick.

Ingredients

Seafood:

1 lb shrimp, peeled and deveined

Vegetables:

1 (8 oz) bag baby spinach

3 cloves garlic, minced

1 bunch fresh parsley, chopped (for garnish)

2 (14 oz) cans tomatoes, diced

Pasta:

1 (16 oz) box spaghetti

Seasonings:

2 tablespoons all-purpose flour

1/4 cup Cajun seasoning

1 pinch salt and pepper, to taste

Oils & Vinegars:

1 tablespoon olive oil

Dairy:

1 tablespoon butter

2 cups milk

1/2 cup Parmesan cheese, grated

Instructions

Cook the Spaghetti:

Boil the spaghetti in salted water according to package instructions.

Drain and set aside.

Cook the Shrimp:

Season the shrimp with Cajun seasoning, salt, and pepper.

In a large skillet, heat olive oil over medium heat.

Add the shrimp and cook for 2-3 minutes on each side until pink and cooked through.

Remove shrimp from the skillet and set aside.

Make the Sauce:

In the same skillet, melt the butter and sauté the garlic for 1 minute until fragrant.

Add the flour and stir well to form a roux.

Slowly pour in the milk while whisking constantly to prevent lumps.

Add the diced tomatoes and bring the sauce to a simmer.

Let it thicken for 5-7 minutes.

Add the Spinach:

Add the baby spinach to the sauce and stir until wilted.

Combine Everything:

Add the cooked spaghetti and shrimp to the skillet. Toss everything together to coat with the sauce.

Sprinkle with grated Parmesan cheese and mix well.

Serve:

Garnish with fresh parsley and extra Parmesan. Serve hot.
