My journey into sourdough began with a lot of trial and error, and I quickly learned that not all flours are created equal when it comes to feeding your bubbly friend. So, what kind of flour should you use? Let's dive in! The Basics: All-Purpose vs. Bread Flour Many people start with all-purpose flour, and it can certainly work, especially if it's unbleached. Bleached flour can sometimes contain additives that aren't great for yeast activity. However, in my experience, unbleached bread flour often yields a more vigorous starter. Why? Bread flour typically has a higher protein content (around 12-14%), which provides more 'food' for the wild yeasts and bacteria in your starter. This extra protein helps create a stronger gluten network, leading to a more robust and active starter that can lift your bread beautifully. When I switched to feeding with good quality bread flour, I noticed a significant boost in my starter's activity and consistency. Do You Need Whole Wheat Flour for Sourdough Starter? This is a common question! While you don't strictly need whole wheat flour to maintain a sourdough starter, I highly recommend incorporating it, especially when you're first getting it going or if your starter seems sluggish. Whole wheat flour contains the germ and bran of the wheat berry, which are packed with extra nutrients, enzymes, and microbes that absolutely supercharge your starter's activity. FEEDING MY SOURDOUGH STARTER
