French Onion Soup

French Onion Soup with a little Southern and Texas Twist. #soup #easyrecipe #cooking

Ingredients:

3 Yellow onions sliced or French cut

3 Red onions sliced or French cut

3-4 Slices of Bacon, cut into pieces or crumbled (This goes on top of the cheese which I forgot to do)

2 Sticks of butter or 1 Cup

1 T of Thyme, Basil, Pepper and salt.

2 Bay Leaves

1 1/2 T of Garlic or 4 Cloves

1 1/2 Cups white wine

4 Cups Chicken Stock

1 1/2 T of Beef Base

1/3 C of Flour

4 1/2 Cups H2O

Using a dutch oven cook bacon until crispy and set bacon aside.

Over medium heat, sauté onions in butter and bacon grease stirring often and render onions down until they turn dark brown or caramelized. Be patient on this step, it takes a while.

Add Salt, bay leaf, seasonings and cook down 3-5 minutes and then deglaze with white wine. Remove bay leaves and add garlic, then flour and cook a few minutes until flour is incorporated. Then add in your stock and water and simmer for 30 minutes until you have a beautiful soup.
