Zucchini Pasta

Turn on oven to 400 Degrees and place tomatoes in a baking dish and drizzle with 2 tbsp EVOO and season with how ever much of each of the seasonings you like.

Minced Garlic

Basil

Oregano

Black Pepper

Salt

Stir well and place in the oven for 30-35 minutes. Then pull out and smash to liquify the tomatoes into a sauce.

Then cut 3 zucchini’s into flat pieces and salt each piece and sit for 30 minutes and then drain off water and wipe off the excess water and salt. In a HOT saute’ pan (med-high) cook zucchini until they are golden brown about 8-10 minutes and season with salt, pepper and garlic.

Mince up some fresh basil and really the only thing left to do is build your dish. Enjoy.
