Okay, so if you're like me, sometimes you want that cozy, hearty breakfast casserole vibe for Christmas morning, but maybe you're not in the mood for hash browns, or you just don't have any on hand! That's exactly why this 'no hash browns' breakfast casserole has become our go-to holiday tradition. It's incredibly simple to throw together, often the night before, and it comes out perfectly golden and bubbly every time, without any of the fuss of potatoes. The secret to a great breakfast casserole without hash browns is all about the *bread*. Instead of shredded potatoes, we use cubed bread as our base. It soaks up all the eggy goodness and creates a wonderfully satisfying texture that's still substantial. I usually go for a sturdy white bread, cut into 1-inch cubes. If your bread is a little stale, even better – it holds its shape beautifully and prevents the casserole from becoming watery. You can even lightly toast the bread cubes beforehand for extra crunch, though it's optional! Here’s a peek into how I make ours, keeping it super flexible for whatever you have in the fridge. First, I brown about a pound of breakfast sausage or crispy bacon and drain off any excess fat. If I'm feeling fancy, I'll also sauté some diced onion and bell pepper until they're soft – it adds so much flavor! Next, in a large bowl, I whisk together about 8-10 large eggs with 2 cups of milk (whole milk makes it extra rich!), a pinch of salt, black pepper, and sometimes a little garlic powder or dry mustard for an extra kick. This is where you can get creative! Then, I toss in the cooked sausage or bacon, the sautéed veggies, and about 2 cups of shredded cheese (cheddar and Monterey Jack are my favorites!). Finally, I gently fold in those bread cubes. You want to make sure they're all coated in the egg mixture. I transfer everything into a greased 9x13 inch baking dish. This is the magic part: I usually cover it and pop it in the fridge overnight. Letting it sit allows the bread to really soak up the egg mixture, making for a more cohesive and flavorful casserole. When Christmas morning rolls around, all I have to do is pull it out of the fridge about 30 minutes before baking to let it come closer to room temperature. I bake it at 350°F (175°C) for about 45-60 minutes, or until it’s set in the middle and golden brown on top. Sometimes I'll cover it with foil for the first 30 minutes to prevent the top from browning too quickly, then uncover it for the last 15-20 minutes. You can tell it's done when a knife inserted into the center comes out clean. This casserole truly is a lifesaver for busy holiday mornings. It feeds a crowd, smells amazing, and is always a huge hit. Plus, knowing I can customize it without hash browns means I can always whip it up with what I have.
