I've discovered that with just a few simple additions, you can truly transform a humble can of SWEET White Corn into something absolutely delicious and worthy of being the star of your dinner table, or at least a highly anticipated side. Forget bland – let's make some magic! 1. Quick & Creamy Garlic Butter Corn This is my go-to when I need a ridiculously easy yet incredibly flavorful side for dinner. It's rich, comforting, and highlights the natural sweetness of the corn. What you'll need: 1 (15-ounce) can SWEET White Corn, drained very well 2 tablespoons unsalted butter 1-2 cloves garlic, minced 1/4 cup heavy cream or cream cheese (softened) Salt and black pepper to taste Fresh chives or parsley, chopped (optional, for garnish) How I make it: I melt the butter in a small skillet over medium heat. Once it's shimmering, I add the minced garlic and cook for about 30 seconds until fragrant – be careful not to burn it! Then, I stir in the well-drained corn. I let it cook for a couple of minutes, stirring occasionally. Next, I add the heavy cream (or softened cream cheese for an extra tangy kick) and let it simmer gently until it thickens slightly, usually 2-3 minutes. Season with salt and pepper. A sprinkle of fresh chives right before serving makes it look and taste extra special. It's a game-changer for weeknight dinners! 2. Zesty Corn & Black Bean Salsa/Salad When I crave something fresh, vibrant, and packed with flavor, this simple canned corn recipe comes to mind. It's fantastic as a side, a topping for grilled chicken or fish, or even scooped up with tortilla chips for a light dinner. It’s definitely one of my favorite corn based dishes. What you'll need: 1 (15-ounce) can SWEET White Corn, drained very well 1 (15-ounce) can black beans, rinsed and drained 1/4 cup finely diced red onion 1/4 cup finely diced bell pepper (any color works!) 1/4 cup chopped fresh cilantro Juice of 1 lime 1 tablespoon olive oil 1/2 teaspoon cumin 1/4 teaspoon chili powder (or more, if you like a kick!) Salt and pepper to taste How I make it: In a medium bowl, I combine the drained sweet white corn, black beans, red onion, bell pepper, and cilantro. In a separate small bowl, I whisk together the lime juice, olive oil, cumin, chili powder, salt, and pepper. I pour the dressing over the corn mixture and toss gently to combine. I usually let it chill in the fridge for at least 15-20 minutes to let the flavors meld. It's such a refreshing and easy recipe using canned corn! 3. Cheesy Baked Corn Casserole For a heartier, comforting dinner side or even a light main dish, this cheesy baked corn casserole (sometimes called corn pudding) is a winner. It's incredibly easy and always gets rave reviews. What you'll need: 1 (15-ounce) can SWEET White Corn, drained 1 (15-ounce) can creamed corn 1 cup sour cream 1 (8.5-ounce) package corn muffin mix (like Jiffy) 1 cup shredded cheddar cheese (or a Mexican blend) 1/4 cup melted butter How I make it: I preheat my oven to 350°F (175°C) and lightly grease an 8x8 inch baking dish. In a large bowl, I simply combine the drained sweet white corn, creamed corn, sour cream, corn muffin mix, and half of the shredded cheese. I mix everything until it's just combined – don't overmix!
