My favorite spicy leek and corn chowder!
There’s always that time of year when it starts getting warmer outside, and all I want to do is spend my afternoons finding a use for the fresh produce piling up in my kitchen. 🌽 I used to think that you could only eat soup in the winter, until I realized how incredible it is at capturing the sweet, vibrant flavors of delicious, juicy corn. This creamy corn and leek chowder has easily become my favorite way to slow down and create something that tastes like absolute luxury!
Ingredients 🛒:
• The Base: 4 tbsp salted butter, 2 cups thinly sliced leeks (white and light green parts only), and 2 minced garlic cloves.
• The Star: 6 ears of corn (cut the kernels right off the cob!)
• The Simmer: 3 cups chicken stock, 1 tsp kosher salt, 1 tsp freshly cracked black pepper, and ¼ tsp cayenne pepper for a tiny bit of warmth.
• The Creaminess: 2 cups heavy cream.
• Optional Garnish: Micro-greens and thinly sliced green onions.
Instructions 🧑🍳:
1️⃣ Melt your butter in a Dutch oven over medium heat. Toss in the leeks and stir them often for about 5 minutes until they are soft and tender.
2️⃣ Stir in the fresh corn kernels, the bay leaf, and the minced garlic. Keep cooking for another 3 to 4 minutes until that garlic smells amazing.
3️⃣ Pour in the chicken stock and add your salt, black pepper, and cayenne. Bring it up to a simmer, then turn down the heat and let it bubble gently for 20 minutes so all those flavors marry together.
4️⃣ Grab an immersion blender and blend the soup right in the pot until it is completely smooth and velvety. (If you’re using a regular blender, just let it cool for a minute before transferring it over!).
5️⃣ Stir in the heavy cream over low heat until it’s fully incorporated, and give it a quick taste to see if it needs a little extra salt or pepper.
6️⃣ Ladle it into the bowls and top with a few micro-greens, green onions, and an extra swirl of cream if you’re feeling fancy.
Chef’s Tip 💡:
• When cutting corn off the cob, place a smaller bowl upside down inside a larger bowl. Rest the cob on top of the small bowl - it catches all the kernels perfectly without them flying all over your counter!
• If you like a little spice, and in a splash of Tabasco sauce to make it spicier!
