⭐️ ᴅᴀʏ 4: ʜᴇᴀʟᴛʜʏ ꜱᴏᴜʀᴅᴏᴜɢʜ ꜱᴛᴀʀᴛᴇʀ
Flour, water, salt and levain. There are no secret ingredients that make a good sourdough loaf. This is why your starter health is pretty important.
Martin (my starter) has an ancestry from Europe and it’s 30+ years old. Most of the time, it sits covered in my refrigerator and gets fed right before feeding/baking day.
Sometimes it feels like I’m wrestling with Martin as I pull some for the dough - but that’s how you know it’s ready!
👩🍳 My Starter Tips:
~ 1:1:1 ratio of starter, flour, water for regular feeding
~ 1:10:10 ratio before going away on a holiday
~ Name your starter so its like a baby under your care
👍🏻 Signs of Healthy Starter:
~ Minimally doubles in size
~ Many visible bubbles throughout
~ Smells pleasantly tangy (not vinegary or alcoholic)
~ Predictable and responsive timing
🔍 Ready to Use:
~ Beautiful dome top with bubbles
~ Consistency like thick pancake batter
~ Strength slightly stretchy when pulling apart
~ Usually peaks around 4 hours after feeding but yours may vary!
