Personally, I've found that marinating tofu in gochujang, a Korean fermented chili paste, truly transforms its flavor profile and texture. The spicy, slightly sweet, and savory notes of gochujang complement the mildness of tofu perfectly. When preparing tofu with gochujang, I like to start by pressing the tofu to remove excess moisture, which helps it absorb the marinade better. Then, I mix the gochujang with some sesame oil, garlic, a bit of soy sauce, and a touch of honey or sugar to balance out the spice. Letting the tofu marinate for at least 30 minutes allows all those rich flavors to soak in. Cooking methods are also key. Pan-frying the marinated tofu until crispy on the outside while remaining soft inside adds a delightful texture contrast. You can then glaze it with a bit more gochujang sauce during cooking for an extra punch of flavor. Serving this tofu with rice, steamed vegetables, or even in a bowl with kimchi and greens makes for a satisfying and nutritious meal.
