Making focaccia at home is a rewarding experience that brings a fresh, aromatic touch to your kitchen. One thing I've learned through trial is the importance of controlling the dough's hydration and letting it rest sufficiently. The recipe's 400ml of warm water combined with the baker's yeast and honey creates a yeast-friendly environment that leads to a light, airy texture when baked. Be sure to use good quality olive oil, as it greatly impacts the bread's flavor. I like to drizzle some extra virgin olive oil on top before baking and sprinkle coarse sea salt to enhance the taste and texture. Using olives, like kalamata or green olives, not only adds character but also balances the earthy notes of the dough. When mixing the dough, you want to ensure it's uniform but not over-kneaded; this helps keep the focaccia tender. The resting times—first under plastic wrap for 45 minutes, then again for an hour—allow the dough to rise properly, developing gluten and flavor. After placing it on baking paper on a tray, I've found poking small holes with your fingers keeps the texture light and lets the olive oil seep in. Baking at 200°C for 25-30 minutes gives a perfect golden crust that's crisp outside and soft inside. This focaccia works wonderfully as a base for sandwiches or served alongside soups and salads. Making your own focaccia not only elevates your meals but also offers you the joy of fresh-baked bread any time you desire.
