The easiest pasta you’ll ever make 🍝🌿

Ever since I first tried this recipe at a restaurant in LA, I’ve been hooked! It’s the perfect balance of sweet and spicy, with the parsley balancing out the pepper so amazingly.

The impressive flavors in this dish combined with the smallest amount of cooking prep I’ve done since boxed mac & cheese make this recipe a sure hit for anyone you serve it to, and the perfect dish to cook for a lot of guests!

Aglio e Olio 🌶️

1 package spaghetti or any fun long twisty pasta

2 chili peppers

1 bundle fresh parsley

2 cloves garlic

Olive oil, salt, pepper

1. Boil water as you prep. I always add salt and olive oil drizzle to the water. Cook pasta according to pack instructions.

2. Prep ingredients: Finely chop chilis and parsley. Slice garlic into thin slices.

3. Place large drizzle of olive oil into pan (I do enough to cover the bottom as you’ll need enough to coat the pasta

4. Once oil is heated, add in garlic, pepper, and half the parsley. Sauté 3-4min

5. Add in pasta and mix together. Serve and top with any extra parsley.

Let it slowly infuse the olive oil over low to medium heat until it's fragrant and just turning golden. This process, where the chopped garlic and chili peppers gently cook in the oil, is what builds that incredible flavor base. Sometimes, I even add a tiny pinch of red chili flakes along with the fresh chili for an extra layer of warmth and a slightly smoky kick, especially if I want to really amp up the spice. When it comes to adding olive oil to pasta, there are a couple of points to consider beyond just drizzling it into the boiling water. While a little olive oil in the pasta water can help prevent sticking, the real magic happens when you combine the cooked pasta with your delicious garlic, parsley, and chili-infused olive oil sauce. Make sure you reserve some of that starchy pasta water! It's your best friend for creating a silky, emulsified sauce that coats every strand of spaghetti beautifully.
