It might not be summer yet, but my cravings for something light and fresh say otherwise!
Guac is something to be taken seriously and I am in no way a guac pro, but I just love how this recipe is the perfect balance of light, savory, and sweet. While it makes enough for a few people, I won’t lie here in saying it was my lunch and dinner this weekend 👀🫠
Getting right into it ✨
🥑 4-5 ripe avocados
🧅 1 red onion (I only used about 1/2-3/4 of it!)
🍅 1 tomato
🧄 1 garlic clove, finely diced (ngl I cheated in this batch and used about 1/2 tbsp garlic powder!)
💚 1 lime
🌿 1 cup fresh cilantro, roughly chopped
🧂 Salt, pepper
1. Prep: Separate avocados from skins/pits, finely chop onion, tomato, garlic, and cilantro. Zest lime and cut in half.
2. Combine all of the above into a bowl, add 1/2 lime juice + zest, salt and pepper to taste.
3. Mash with backside of a fork to desired chunkiness.
... Read moreAfter making that amazing fresh guacamole, I often get asked about the best ways to store it or how to customize it even further. While a fresh batch rarely lasts long in my house, knowing a few tricks can really elevate your guac game and ensure you enjoy every last bit!
First, let's talk about storage, especially since many wonder, 'can you freeze guacamole?' My personal experience is that freezing isn't ideal for guacamole. While technically possible, the texture often changes dramatically, becoming watery and less creamy upon thawing. The vibrant green color also tends to suffer. Instead, for short-term storage (1-2 days), I've found a few methods work wonders to prevent that dreaded brown oxidation. My go-to is pressing a layer of plastic wrap directly onto the surface of the guacamole, ensuring no air pockets. For an extra layer of protection, you can drizzle a tiny bit of lime juice (those fresh Limes are key!) over the top before adding the plastic wrap. Some people even add a thin layer of water over the top, then pour it off before serving – I haven't personally tried that one, but it's a popular tip!
Now, for perfecting that 'step by step guacamole recipe' and truly getting a 'zesty kick' that suits your taste. It all starts with the right Avocados. I always look for ones that are slightly firm but yield to gentle pressure – not too hard, not too mushy. For the Prep work, don't underestimate the impact of finely dicing your Red onion and Tomato; it helps everything blend beautifully. And speaking of blending, while the recipe calls for one garlic clove, I sometimes add two for an extra punch, or even a tiny pinch of cayenne pepper if I'm feeling adventurous and want more of a 'kick' beyond just the lime. Fresh Cilantro is non-negotiable for that authentic flavor, so don't skimp on it!
When it comes to the Mash step, it's all about personal preference. I like mine a bit chunky, so I don’t overdo it. If you prefer a smoother texture, keep mashing! You can also adjust the salt and pepper as you go; tasting as you mix is crucial. For an even zestier flavor, don't be afraid to add a little more lime juice than initially called for – it brightens everything up and also helps with color retention.
Finally, while chips are the classic pairing, don't limit yourself! I love adding this fresh guacamole to my morning scrambled eggs, spreading it on toast, topping tacos or burritos, or even as a creamy dressing for salads. It truly makes any meal feel a little more special and summery, no matter the season. Experiment with what you have and make this recipe truly your own!
