Chicken Meatballs with Cilantro Lime Sauce

Ingredients:

For the Meatballs:

- 1 lb ground chicken

- 1/4 cup breadcrumbs

- 1/4 cup grated Parmesan cheese

- 1 egg, lightly beaten

- 2 tablespoons fresh cilantro, chopped

- 1 teaspoon garlic powder

- 1/2 teaspoon cumin

- Salt and pepper to taste

- 2 tablespoons olive oil

For the Cilantro Lime Sauce:

- 1/2 cup Greek yogurt

- 1/4 cup fresh cilantro, chopped

- Juice of 1 lime

- 1 clove garlic, minced

- Salt and pepper to taste

Directions:

1. Preheat oven to 375°F (190°C).

2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, cilantro, garlic powder, cumin, salt, and pepper. Mix until just combined.

3. Roll the mixture into small meatballs and place them on a baking sheet lined with parchment paper.

4. Heat olive oil in a skillet over medium heat and sear the meatballs for 2-3 minutes until browned on all sides.

5. Transfer the meatballs to the oven and bake for 15 minutes or until fully cooked.

6. While the meatballs are baking, prepare the sauce by blending Greek yogurt, cilantro, lime juice, garlic, salt, and pepper until smooth.

7. Drizzle the sauce over the cooked meatballs before serving.
