What is Meditalian?

Idk dude, I made it up. But it feels right 😂

THIS WAS ABSOLUTELY DELISH THOUGH, and one pan. (Because my chicken breast was already cooked… btw). It was 11pm, and I had just cooked for 5 hours, but I needed something healthy and not as frowned upon shoveling down before bed time, but y’all I was starving and I needed to use some of these ingredients from my fridge okaaayyy?

🍴one serving 🍴

•preheat oven to 400°F

Put on a pan with some olive oil:

•thin sliced onions & yellow bell peppers + 1 cup rinsed chick peas … roast for 10-15 min

•grab a 1/2 cup of Giardiniera mix, put in a bowl, add a 1/2Tbsp sugar, pinch of crushed red pepper, sprinkle of Turmeric & Cumin, and a heftyyy pinch of Parsley. Mix it. Let it sit.

•pull out your pan and add 2 Cups of Kale 🥬 + a sprinkle of sunflower seeds. Mix into the oily goodness that is in your pan. Pop back in about 7 minutes.

•cut up your cooked chicken breast into larger pieces and toss in the Giardiniera concoction you just made.

•add that to your pan, roast about another 5-10 min

Dump it in a bowl, viola.

✨ Top w/ Feta Cheese & black pepper

🍷 Would totally pair with a rich, buttery Chardonnay that had some citrus notes

🧂 notice I didn’t add any salt?? It’s not even needed with these ingredients!!
