My secret to a truly amazing homemade tomato soup starts with good quality ingredients. You don't need anything fancy, just fresh flavors. Here’s my go-to recipe that always hits the spot: Ingredients: 1 tbsp olive oil 1 medium onion, chopped 2-3 cloves garlic, minced 2 (28 ounce) cans crushed tomatoes (good quality makes a huge difference!) 4 cups vegetable or chicken broth 1/2 cup heavy cream (optional, for extra richness and creaminess) 1 tsp sugar (this helps balance the acidity of the tomatoes) Salt and freshly ground black pepper to taste Fresh basil for garnish (optional, but highly recommended!) Instructions: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes. Don't rush this step, as it builds the flavor base. Stir in the minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic, or it can turn bitter! Pour in the crushed tomatoes, broth, and sugar. Bring the mixture to a gentle simmer, then reduce the heat to low, cover, and let it cook for at least 20-30 minutes. This allows all those beautiful flavors to meld together and deepen. For a super smooth soup, carefully use an immersion blender directly in the pot until creamy. If you don't have one, you can transfer it in batches to a regular blender (be very careful when blending hot liquids – never fill it more than halfway and hold the lid down with a towel!). Stir in the heavy cream, if using, and heat through gently. Do not bring the soup to a boil after adding the cream, as it can curdle. Season generously with salt and pepper to taste. A little fresh basil stirred in or as a garnish really brightens up the flavors and adds a pop of color! Pro Tip: If you want an even deeper, more complex flavor, try roasting some fresh tomatoes with a drizzle of olive oil, salt, and pepper in the oven for 20-25 minutes before adding them to your soup.
