For the soup you will need:
• 6 medium sized tomatoes🍅
• 1/2 cup of cherry tomatoes🍒
• half a large red onion 🧅
• olive oil (as much as your heart desires) 🫒
• basil and/or Italian seasoning 🍴
• salt & pepper🧂
• 1-2 cups vegetable broth🍵
• 1 cup buttermilk OR half cup of heavy cream 🥛
• any blender
• optional: parmesan cheese🧀
For the grilled chez:
• sourdough bread (good kind) 🍞
• cheese of your choice, cheddar, swiss, mozz, gouda🧀
• grill the bread in mayo instead of butter, trust me 🧈
Instructions:
•preheat oven to 400🍅
•place veggies on a sheet pan w/ parchment paper🧅
•drizzle with olive oil and coat with seasonings🫒
•roast for 45 mins⏰
•place veggies, broth, buttermilk, and seasonings to taste inside blender 🍽️
•blend until smooth, add more broth to your liking if you don’t want a thicker soup, or add more dairy if you want a creamier consistency 🥛
I like to top my soup off with parmesan, a drizzle of heavy cream, olive oil, & black pepper 🥄
