During my high school years, I frequently enjoyed the chili cheese fries from the lunch menu. Some people commented on my inclination to enhance the dish with guacamole, diced tomatoes, onions, and cilantro, but I viewed it as an opportunity to enrich the flavors. Now, as I embrace a plant-based lifestyle, I have adapted the recipe to reflect my commitment to both delicious and health-conscious eating.

🥔For the Fries:
- 1 russet potato, sliced into ¼-inch sticks
- 1 tsp. black pepper
- 1 tsp. sea salt
- 2 tbsp. Avocado oil, for drizzling
👨🏾🍳👍🏾In a large bowl, combine the potatoes with the oil and seasonings. Cook in an air fryer at 380°F for 12 to 15 minutes, flipping halfway through, or until crispy.
🌶For the Chili:
- 1 cup walnuts (soaked in water overnight or for 4 hours)
- 3 tbsp. chili powder
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
- ½ tsp. chipotle powder
- 1 tbsp. spice blend of your choice
- Sea salt, to taste
- 1 large tomato
👨🏾🍳👍🏾Blend all ingredients together and set the mixture aside.
🧀For the Cheese Sauce:
- ½ cup unsweetened coconut milk
- 2 tbsp. nutritional yeast
- 1 tbsp. onion powder
- ½ tsp. smoked paprika
👨🏾🍳👍🏾Cook on low heat without boiling and set aside.
🥑For the Simple Guacamole:
- ½ avocado
- ½ tsp. onion powder
- ½ tsp. garlic powder
- Juice of 1 key lime
👨🏾🍳👍🏾Mash the avocado with the seasonings and lime juice and set aside.
🍽Presentation:
Plate the fries and layer them with the chili, cheese sauce, and guacamole. Garnish with diced tomatoes and onions, and sprinkle with chopped cilantro.
