Mini Apple Pie Bites
There is something about apple pie that just hits differently but I never want to make a full pie just for myself. These mini apple pie bites were my solution. Individual, portioned, and honestly more fun to eat than a regular slice. That first bite of warm cinnamon apple wrapped in a soft golden lattice crust feels like pure nostalgia.
Ingredients
• 1 pie crust homemade or store bought
• 2 cups apple pie filling
• 2 tbsp brown sugar
• 1 tsp cinnamon
• 1 tbsp butter melted
• 1 egg for egg wash
• 1 tbsp sugar for topping
Steps
1. Preheat oven to 375°F
2. Roll crust and cut into small circles
3. Add a spoonful of filling to each circle
4. Weave thin dough strips into a lattice on top
5. Brush with egg wash and melted butter
6. Sprinkle cinnamon sugar generously
7. Bake 18 to 22 minutes until golden brown
8. Let cool slightly before serving
Why I make this at home
Store bought individual desserts are overpriced and usually too sweet. Making these at home costs less and lets me control the cinnamon level which matters because I like a stronger flavor.
My personal twist
I mash the filling slightly so it sits better inside each bite. I go heavy on cinnamon and pull them right when golden because I prefer a soft tender crust.
Ways to improve
• Use fresh diced apples instead of canned for better texture
• Add a pinch of nutmeg for more depth
• Drizzle a light glaze for extra sweetness
• Chill the dough before baking so the lattice holds its shape
