Fluffy Cinnamon Roll Croissants
This shaping method changed everything
I made these cinnamon roll croissants today and I genuinely cannot stop thinking about them. Soft, fluffy, and layered in the best way. Not quite a cinnamon roll and not quite a croissant, but the best of both. The secret is cutting the filled dough into triangles and rolling them like croissants instead of slicing into rounds. That one change gives you those pull apart layers you do not usually get from a classic cinnamon roll.
Ingredients
Dough
• ¾ cup (180ml) warm milk
• ½ cup (100g) sugar
• 2½ tsp yeast
• 2 eggs, room temperature
• ½ cup sour cream
• ½ cup butter, very soft
• 1 tsp vanilla
• 4½ cups bread flour
• 1 tsp salt
Filling
• ½ cup salted butter, softened
• ¾ cup brown sugar
• 1 tbsp cinnamon
• 1 tsp vanilla
• ½ tsp almond extract optional
Glaze
• 4 oz cream cheese
• 2 tbsp butter
• 1 cup powdered sugar
• 1 to 2 tbsp milk
• ½ tsp vanilla
Steps
1. Mix warm milk, sugar, and yeast. Let sit 5 to 10 minutes until foamy
2. Add eggs, sour cream, butter, and vanilla
3. Mix in flour and salt until a soft, slightly tacky dough forms
4. Knead 5 to 7 minutes until smooth
5. Rest 30 to 45 minutes. It should be relaxed, not fully doubled
6. Roll into a 20 by 12 rectangle and spread filling evenly
7. Cut into 5 long strips, then slice diagonally into triangles
8. Add a small slit at the base of each triangle and roll tightly
9. Proof 25 to 30 minutes until slightly puffy
10. Brush with egg wash and bake at 350°F for 18 to 22 minutes until deep golden
11. Glaze while still warm so it melts into the layers
Why I make these at home
I love bakery pastries, but there is something about pulling these straight from the oven at home. They are warm, soft, and you can make them exactly how you like.
My personal preference
I go light on the glaze so the cinnamon and that hint of almond come through.
Tip
If the dough feels too soft while shaping, chill it for 10 to 15 minutes. This helps the layers hold their shape and makes rolling easier.
