Easy Rainbow Buttercream Cupcakes
I wanted cupcakes that looked like they came straight from a bakery case but still tasted soft and homemade so I built these around a light vanilla base and a clean rainbow buttercream swirl that stays picture perfect every single time
The buttercream is honestly everything here. Layering the colors side by side in plastic wrap instead of mixing them gives you that smooth distinct rainbow effect in every swirl. No muddy colors just clean pastels all the way through
Ingredients
Vanilla Cupcakes
1½ cups all purpose flour
1 cup sugar
¼ cup butter softened
¼ cup canola oil
2 eggs room temperature
½ cup milk
1½ tsp vanilla
1½ tsp baking powder
¼ tsp salt
Rainbow Buttercream
1 cup unsalted butter softened
3 to 4 cups powdered sugar
2 to 3 tbsp milk or heavy cream
1 tsp vanilla extract
Gel food coloring in your favorite colors
Pearl sprinkles to finish
Instructions
1. Preheat oven to 350 and line your cupcake pan
2. Cream butter and sugar until light and fluffy
3. Add oil eggs milk and vanilla and mix until smooth
4. Whisk flour baking powder and salt separately then fold into wet ingredients until just combined
5. Fill liners ⅔ full and bake 18 to 20 minutes then cool completely before frosting
6. Beat butter until smooth slowly add powdered sugar then vanilla and milk until fluffy and pipeable
7. Divide into bowls and color each portion with gel coloring
8. Lay colors side by side on plastic wrap roll into a log and place into piping bag
9. Pipe from the outside in working in a steady spiral
10. Top with pearl sprinkles

You get that full bakery look without the bakery price tag and you control the colors and sweetness exactly how you want them
My honest tip
Always use gel food coloring. Liquid coloring thins the frosting and dulls the colors fast. Gel keeps everything thick vibrant and pipeable
What I would do differently
I would add a small splash of almond extract next time for that nostalgic birthday cake flavor
