Strawberry Crunch Cupcakes 🍓✨

These strawberry crunch cupcakes are soft, fluffy, and coated in that classic strawberry crunch topping💕

They remind me of those nostalgic strawberry crunch ice cream bars; but in cupcake form!

What I made: Strawberry crunch cupcakes with vanilla buttercream

Who it’s for: Mother’s Day / anyone who loves nostalgic desserts!

Why it’s meaningful: It’s a fun, throwback-inspired dessert that feels both homemade and bakery-style

🍓Strawberry Cupcakes (Doctored Cake Mix)

Ingredients:

* 1 box strawberry cake mix

* 3 eggs

* ½ cup oil

* 1 cup milk (instead of water)

* ½ cup sour cream (for extra moisture)

* 1 tsp vanilla

Instructions:

1. Preheat oven to 350°F and line cupcake pan

2. Mix all ingredients until smooth

3. Fill liners about ⅔ full

4. Bake 18–22 minutes or until done

5. Cool completely

Vanilla Buttercream

Ingredients:

* 1 cup butter (softened)

* 3–4 cups powdered sugar

* 2–3 tbsp milk or cream

* 1 tbsp vanilla

Instructions:

1. Beat butter until smooth

2. Add powdered sugar gradually

3. Mix in milk and vanilla until fluffy and pipeable

🍓 Strawberry Crunch Topping

Ingredients:

* Golden Oreos

* Freeze-dried strawberries

* 2–3 tbsp melted butter

Instructions:

1. Crush Oreos and freeze-dried strawberries

2. Mix with melted butter until crumbly

Assembly

Instructions:

1. Pipe frosting onto cooled cupcakes

2. Gently roll the sides in strawberry crunch topping to coat

3. Pipe a little extra frosting on top if desired

🍓 Garnish

* Half a golden Oreo

* Half a fresh strawberry

✨ Tip: Press the crunch topping gently so it sticks without messing up the frosting
