Homemade Meat Lasagna (No Ricotta)
A couple of my family members don’t like ricotta, so I made this version without it and honestly, nobody misses it.
Ingredients
1 lb ground beef
1 lb ground turkey
1 lb chicken Italian sausage
1 medium yellow onion, diced
4 garlic cloves, minced
6 cups marinara or crushed tomato sauce
2 tsp dried Italian seasoning
1½ tsp salt
½ tsp black pepper
2 large eggs
2 cups grated Parmesan cheese, divided
5 cups shredded whole-milk mozzarella
16 lasagna noodles (regular or no-boil)
2 tbsp fresh parsley or basil, chopped
How I made it:
1. Brown the ground beef, turkey, and sausage with onion and garlic until fully cooked.
2. Stir in marinara sauce, Italian seasoning, salt, and pepper. Simmer to combine.
3. In a separate bowl, mix eggs with half the Parmesan and half the mozzarella (this replaces the ricotta layer).
4. Layer noodles, meat sauce, cheese mixture, and remaining mozzarella in a baking dish, repeating until the pan is full.
5. Top with remaining Parmesan and mozzarella.
6. Cover with foil and bake at 375°F for 45 minutes.
7. Remove foil and bake another 15 minutes, until golden and bubbly.
8. Let rest 15 minutes out of the oven before slicing.
