Restaurant Re Make
I used my leftover tortilla chips and salsa from a dinner out to recreate a similar dish that I had at a restaurant the other night while celebrating my husband’s birthday.
I layered whole black beans, vine ripened tomatoes, black olives, edamame hummus, roasted red peppers, iceberg lettuce mix and guacamole with the chips and salsa.
It’s a great way to use your leftovers.
The creamy hummus is similar to sour cream and a great plant based alternative. The salsa acts as a dressing and it’s full of flavor with diced onions. The beans add texture and protein.
