Shrimp Avocado Lettuce Boats 🦐🥑
Cool, crunchy, and juicy with a bright little kick.
You’ll Need (serves 4):
• 12 oz cooked shrimp, peeled + chopped
• 2 ripe avocados, diced
• 2 small tomatoes, diced
• 1/4 red onion, finely chopped
• 8 large romaine leaves
• 1/4 cup chopped cilantro
• 3 tbsp olive oil
• Juice of 1 lemon
• 1/2 tsp garlic powder
• 1/2 tsp salt
• 1/4 tsp black pepper
Optional:
• Crunchy tortilla strips (small handful on top)
• Extra lemon wedges on the side
How to Make it:
1. Chop the shrimp into bite-size pieces.
2. Mix shrimp, avocado, tomatoes, onion, and cilantro in a bowl.
3. Whisk oil, lemon juice, garlic powder, salt, and pepper.
4. Pour dressing over the bowl and stir gently.
5. Spoon into romaine leaves.
6. Top with tortilla strips if you want extra crunch.
Tip:
Add the avocado last so it stays chunky.
